Electrolyte Popsicles

The following is a colorful treat that kids and adults alike may prefer after exercise and more!  Every ingredient in this recipe has at least one electrolyte in it.  It’s a bit tedious to peel and cut the fruit in this recipe alone to me, so I suggest peeling and dicing fruit with others, purchasing fresh fruit that’s already peeled and diced, etc.

INGREDIENTS:

•    Due to how popsicle modes vary in size, the following ingredients will vary with the amounts needed; however, if you are using 12 100 ml popsicle modes, use the following measurements:

1/3 c coconut water
1 ¾ c kiwi, peeled and diced
1 ¾ c mangoes, peeled and diced
1 ¼ c vanilla yogurt

DIRECTIONS:

1.    Put vanilla yogurt a quarter of the way up in each popsicle mode.
2.    Place fruit in a bowl and stir them until they are well dispersed.
3.    Place the fruit in each mode until the fruit almost reaches each brim of each mode.
4.    Pour coconut water until it reaches each brim of each mode.
5.    Affix each popsicle stick in each mode.

6.    Freeze contents for at least 4-6 hours, then pull out popsicles when ready to serve.
